Raw vegan kiwi and pineapple cake

I adore vegan desserts. They are so healthy and delicious. After preparing the apple pie for new year’s eve, I wanted to experiment with our tastes. And as usual, I didn’t regret it.

Ingredients:

  • 1/2 cup dried plum
  • 1/2 cup dried dates
  • 1/2 cup peanuts
  • 3-4 ts water
  • 3 ts flax seed (seed or flour)
  • 5-6 kiwi
  • 1/2 pineapple
  • 4 ts psyllium

Add the dried plums, dates, peanuts, water and flax seed flour to the food procesor and process until a fine meal forms and it is well combined. Press this mixture into the cake pan, evenly and firm. Slice the kiwis and add them to the blender with two ts psyllium. Process until combined. Pour the kiwi layer on top of the base. As a last step, slice the pineapple and process it in the blender until creamy, add the psyllium and combine the two ingredients.  Pour it over the kiwi layer and place the cake in the fridge for one hour before serving.
