Raw vegan chocolate miracle


This is the sweetest and healthiest sin I ever committed. The only problem with it, that you have to leave it in the fridge for at least 2 hours to cool properly. Time seems to be stopped when you know, you are 120 minutes away from the perfect chocolate cake. I tasted the crust and the cream when preparing, and cannot even imagine how these two will combine their uniquely perfect tastes and create something even better in 118 minutes. It was ready in 15 minutes, like almost all the vegan yummies I tried until now. The idea is from one of my favorite vegan blogs, oh she glows. Make sure you check out Angela’s site, it is gorgeous! I simplified her recipe at some points due to lack of ingredients, so let’s see how to make it!


For the bottom layer chocolate crust:

  • 2 cups walnuts
  • 1 cup peanut
  • 3 ts peanut butter
  • 2 ts xilit
  • 2 ts vanilla syrup
  • 2 ts melted coconut oil
  • 1 pinch salt

For the chocolate filling:

  • 150 gr dark chocolate
  • 1/4 cup almond milk
  • 2 ts xilit
  • 2 ts vanilla syrup
  • 2 avocado
  • 1/4 cup cacao powder
  • 2 ts peanut butter

Put the walnuts and peanuts into the blender and process until crumbly. Add the cocoa, coconut oil, salt, sugar, vanilla and the peanut butter and mix them until combined. Scoop the dough into a cake shape and spare evenly. Put it into the freezer.

Melt the dark chocolate in the milk. In the meanwhile, put the avocados vanilla, sugar, cocoa and peanut butter in the blender. When combined, add the chocolate and pulse the ingredients for a couple of times. It should have a mousse texture when ready. This cream is so special, do not miss to taste it when scooping the chocolate on op of the crust. Place it into the fridge for at least two hours.

As Angela suggests, always serve it cold so it doesn’t lose the texture. I don’t think any piece of our cake will get to be placed back into the fridge once we can slice it up. In 110 minutes.
