Gluten free peanut butter pie

I actually wanted to make a peanut butter banana smoothie. But then I realized I am craving for something more, so I came up with this nice pie. Unfortunately we were out of ice cream which would side it heavenly, but without that it was very delicious too!

Ingredients:

For the dough:

  • 10 dkg rice flour
  • 20 dkg all purpose gluten free flour
  • 2 eggs
  • 4 tbsp yogurt
  • 3 tbsp peanut butter
  • 7 g gluten free baking powder
  • 1 banana
  • 3 tbsp xylit
  • 2 tbsp coconut oil

For the filling:

  • 2 bananas
  • 3 tbsp peanut butter
  • 3 tbsp psyllium
  • 1 dl milk
  • 2 tbsp xylit
  • 1/2 c shredded coconut
  • 2 handfull of walnuts on top

Preheat the oven for 170 celsius. Mix the ingredients for the dough in a bowl and pour it into a pan lined with baking paper. Bake the dough for 5 minutes, while you prepare the filling. For the filling mix all ingredients together and pour it on top of the dough (I scooped it in the middle of it, so it would sink in a bit). Spread the walnuts on top and bake for 20-25 minutes, as always, until a toothpick comes out clean.
