Back to gluten free lifestyle! A panCake (pancake-cake sounds awkward) made of rice flour, gluten free pudding and home made peanut butter. That’s what I call a real breakfast. :) I went to the gym today before work, and I knew I need some motivation to start the day early. So I made this cake in the evening and as soon as my alarm went on in the morning it would wait me in the fridge to ease my waking. And it did! The recipe is based on my other gluten free pancake recipe, but due to lack of blueberries I grated two apples in the dough. It turned out to be a good idea!

Ingredients:

  • 1 1/2 cup rice flour pancake2
  • 7 g baking powder
  • 1/2 tsp cinnamon
  • 2 grated apples
  • 1 egg
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1 1/2 cup milk

Add the ingredients in the food processor and mix until well combined. Spoon the dough in a pre-heated pan and bake the pancakes. Flip the pancakes just as the surface bubbles begin to burst. Fill them with peanut butter and lay the pancakes on top of each other to get a cake shape. I made gluten free vanilla pudding to make it more special and added some chocolate chips as decoration.
