Gluten free cheese bites

I tried to make bread from gluten free flour and it was a disaster. I tried to mix gluten free bread flour with corn flour and rice flour, and still, it was horrible. So I gave up. But last week I bumped into this recipe online, and gave it a try. One portion is enough for 12-15 sticks (which became rolls in my case while baking) and I wouldn’t advice you to make more, as it is the yummiest when it is freshly taken out from the oven. I am sure this recipe will be one of my favorites when it comes to cheese bites!

Ingredients:

  • 125 g gluten free bread flour
  • 25 g rice flour
  • 7 g baking powder
  • 70 g sour cream
  • 75 g grated cheese + 50 g when baking
  • 100 g butter
  • 1 egg yolk
  • pinch of salt

Mix the dry ingredients in a bowl with the sour cream. Then add the grated cheese, butter (I melted it in the microwave) and the egg yolk. Form little balls or sticks of the dough, sprinkle the rest of the cheese on top and bake them for 20-25 minutes on 180 celsius.
