Gluten free 101


I try to avoid eating gluten. And sugar. And yeast. Basically everything tasty and good, I thought at the first time when facing this dietary challenge. But I had to realize quickly that I was completely wrong. Avoiding gluten and yeast is easy, but I had (and still have) bad cravings for sugar. I can shovel down a whole Milka bar in 30 seconds. And I did replace lunches or dinners with just some chocolate or a quick cookie. Not to even mention that I didn’t do breakfast. At all. I would normally just have a coffee at home, grab another one on the way to work, have some sweets for lunch and hopefully a proper dinner. I guess 95 % of the working people around can remember to days like these, right? Back to the topic, when I made the decision to eat healthy, I realized I have more energy and food tastes better and richer. It wasn’t easy, and I don’t say I never break my rules anymore, but aren’t rules made to be broken sometimes? Here are the golden ingredients used and avoided by me.

My gluten free (GF) Bible

What is a definite NO?:

  • everything with wheat in their name, except for buckwheat
  • white flour (cupcake, doughnut, cake, bread, dumpling, fried food, croissant, toast, pancake … just to name a few)
  • durum flour
  • couscous
  • barley
  • malt
  • breaded or floured meat, poultry, seafood and vegetables
  • beer (OK, I know, this is impossible to avoid)
  • cereals
  • pasta

Good news, there is a whole other world, full of variety of special flavors and delicious taste on the other side of the balance. Here is my basic gluten free list:

  • all the fruits
  • all the vegetables
  • chicken
  • pork
  • lamb
  • turkey
  • venison
  • butter (better to double-check)
  • egg
  • milk

  • cheese
  • sour cream (Yabadababoo from all the Hungarians)
