Garlic soup


This recipe is my mother-in-law-to be’s “easiest” soup as she says. And as always, the easiest the best. I can’t get enough of it, I cross fingers every time when we go over to have lunch with them to get lucky and smell the delicious garlicky aroma when opening the kitchen door. And as she knows we adore this soup, so she treats us with it a lot of times. It is ready in no time, requires almost no ingredients, and it is super tasty! Enjoy!


  • 10 cloves of garlic
  • 1 spring onion
  • 1 l soup (3 ts Vegeta* spices and 1 l water)
  • 2 ts oil
  • salt, pepper
  • 2 dl cream

Slice the spring onion and bake it on the oil. Add the garlic cloves, the spices and the soup. For the basic soup I normally just use Vegeta spices and water. Bring them to boil and add the cream. Cook it on a low heat for 5 minutes and then use a stick blender to puree the onions. Serve it with soup pearls.


*Vegeta is a mixture of spices and vegetables. In case you wouldn’t know it, you can use any chicken or vegetable soup base.
