French salad with meatballs


I found a paleo meatballs recipe I had to try and of course I needed to make French salad to side it with. I normally would put bread crumbs and minced onion in the meatballs, but bread crumbs are a definite no these days and I was out of onion, so I added carrots to the minced meat. It turned out to be a great idea, you have to try this out!

Ingredients for the meat balls (makes 12-14 balls):

  • 30 dkg minced meat
  • 2 cloves garlic
  • 2 medium sized carrots
  • 2 eggs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp psyllium
  • 2 tbsp coconut oil

French salad mix

French salad:

  • 50 dkg French salad mix (sliced and diced carrot, green peas and potato)
  • 1 c water
  • 2 big apples
  • 4-5 pickles
  • 1 c sour cream
  • 1/2 c mayo
  • 2 tbsp lemon juice
  • 2 tbsp mustard
  • pinch salt, pepper

Mix the minced meat with the grated carrots, minced garlic, eggs , psyllium and spices. Make small balls and bake them on the coconut oil, each side for 6-7 minutes on medium heat.

Boil 1 c water in a pan and add the French salad mix. Cook it on low heat for 5 minutes, drain the veggies well and set aside. In a bowl, mix the mayo, sour cream, lemon juice, mustard and spices. Slice and dice the apples and the pickles and in a big bowl mix the veggies with the apples and pickles. Pour the dressing on top of it.
