“I mean, what’s not to like? Custard, good. Jam, good. Meat, good!”

Chicken with onion jam

I made this caramelized onion jam the other day and I felt like its time to free up its space in the fridge. Onion jam has a very unique taste, it goes very well with cheese or meat. This time I had chicken at home, so I just spooned the onion jam over the chicken and let the oven did the rest of the work. And the result res ipsa loquitur (those latin classes at the university weren’t that big of a waste of time after all), it speaks for itself. I made mashed potato with green peas to side the meat.

  • 4 pieces of chicken (let it be chicken breast, thigh or even wings)
  • 8 ts onion jam
  • salt, pepper

Place the meat in a pan and pour the jam over. Cover the pan with a foil and bake the meat on 180 degrees for 45 minutes, then take off the foil and let the jam caramelize in 5 minutes.
