Carrot chips with chicken wings


I love chicken wings! I know it is not very meat-ful, but I love to go back in time and eat with my hands, just deep-dive in the flavors. I normally eat is with steak potato, but this time I wanted to make it more special (and yeah, you got me, I didn’t have any potatoes left). That’s how I came up with this carrot chips, which is very easy to make and it has a very special taste. It fits so well with the wings, I was amazed!


For the wings:

  • 1 kg chicken wings (about 11-12 pieces)
  • 4 dl tomato puree (1 big can)
  • 4 ts spice mix (I use Vegeta, but any all purpose seasoning mix can do what you use for meat, soups or veggies)
  • 3 ts balsamic vinegar
  • 1 tea spoon pepper

For the carrot chips:

  • 30 dkg carrot (2 big pieces)
  • olive oil
  • 2 ts of spice-mix (again, Vegeta or your all purpose spice mix)

For the chicken wings, mix the ingredients of the sauce in a big pan and put the wings in it. If you have time, let it marinade for a couple of hours. If you are hungry, just pour the wings and all the sauce in a pan (to avoid serious dish-washing problems use baking paper in the pan), cover it with a foil and bake it on 180 degrees for 45 minutes. For the last 10 minutes you can take off the foil.

repa For the carrot chips slice the carrots very-very-very thinly (I used my food processor) and place the carrot slices in a big pan (again, baking paper can be a huge help). Pour a bit of olive oil on top and sprinkle the spices all around the carrots. Note: try to avoid carrots covering each other.

You can also put the slices carrots in a zip bag, pour 1-2 ts of olive oil and the spice mix in the bag and just shake it until the oil and the spices are well spread on all the carrot slices. Then put the carrots in a pan and bake them on 180 degrees for 15-20 minutes.
