Gluten and sugar free apple bread with coconut

I received a great book for Christmas, the Practical Paleo book. It is a fantastic book full with good advice and delicious recipes. A couple of days ago I bumped into an apple muffin recipe in it. As I had apple at home, I only needed a couple of other ingredients and some modification to the recipe to come up with this tasty sweet bread. It is so delicious, it was gone in half a day, so I need to make another portion later today for the weekend. :)

Ingredients:

  • 4 apples
  • 3 tbsp water
  • 3 tbsp cinnamon
  • 1 c rice flour (or white flour, if you are not avoiding gluten)
  • 1 c shredded coconut
  • 1 tsp gluten free baking powder
  • 6 eggs
  • pinch of salt
  • (3 tbsp honey – optional, I did not put any sweetener in it, because of my February sugar free challenge

Grate the apples and add the cinnamon. Pour the puree in a pan and cook it on medium heat for 3 minutes. In a bowl mix the coconut with the flour, salt and baking powder. Add the eggs, one at a time and then mix the apple puree in it. Line a pan with baking paper and spoon the dough in it. Bake it for 20-25 minutes on 170 celsius, until a toothpick comes out clean when plunging into the dough.
